What You’ll Need

1/2 cup (125ml) honey

3/4 ripe pineapple, peeled, chopped

2 cups (500ml) dark rum

Ice cubes

1 orange

1 lime

6 cups (1.5L) Famous Soda Ginger Beer

Dried pineapple rings, mint sprigs & halved passionfruit, to serve
Sieve

Punchbowl

Ice cubes

 

To Garnish

Mint leaves

Dried Pineapple

Passionfruit

 

The Perfect Summer Punch 

Method

Pour honey in a large frypan over medium heat and bring to a simmer for 2-3 minutes or until lightly caramelised.

Add cubed pineapple and cook, stirring occasionally, for 15 minutes or until lightly caramelised.

Cool completely, then place in blender with rum and whiz to a puree.

Fill the punchbowl with ice.

Strain pineapple puree through a fine sieve into punchbowl.

Squeeze the lemon and lime and add to the mix.

Stir through Famous Soda Ginger Beer.

Garnish with dried pineapple, mint, and passionfruit.

 

Tip: The pineapple pure can be made the night before. Once cool, it can be and stored in a seal tight bottle in the refrigerator.
